Rolled Wheat or Oat Cake

-1 c. quick oats or wheat
-1¼ c. boiling water
-½ c. shortening or margarine
-1 c. brown sugar
-1 c. white sugar
-2 eggs
-1 1/3 c. flour
-1 tsp. salt
-1 tsp. cinnamon
-1 tsp. soda (baking)
-1 tsp. vanilla

--TOPPING:--

-1 c. brown sugar
-½ c. evaporated milk
-4 tbsp. melted butter
-1 c. nuts
-1 c. coconut (optional)

Mix oats and water. Let stand 20 minutes. Cream together margarine and sugars. Add to oat mixture. Add eggs. Mix together and add flour, salt, cinnamon, soda and vanilla. Bake in greased 9 x 13 inch pan at 350 degrees for 30-35 minutes. Topping: Cream sugar, milk, butter, nuts and coconut. Spread over warm cake. Put under broiler for 3-5 minutes.

Hi) Here is my favourite recipe of oatmeal cake:

Ingredients
1 1/4 cups boiling water
2 eggs
1 cup rolled oats
1/2 cup packed light brown sugar
1/2 cup sugar
1/2 tsp salt
1/2 cup butter
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp baking soda
1 tsp vanilla extract
1 1/3 cups all-purpose flour
Topping
1/4 cup salted butter
3 Tbsp milk
1/2 cup packed light brown sugar
1 cup shredded coconut
1/3 cup chopped pecans
1/2 tsp vanilla extract
Steps
Step 1
Preheat oven to 350 degrees. Oil a baking dish.

Step 2
Add oats, then pour hot water over oats, let cool.

Step 3
Mix together butter, brown sugar and granulated sugar until pale.

Step 4
Mix in eggs, vanilla, cinnamon and nutmeg then mix in cooled oat mixture.

Step 5
Sprinkle baking soda and salt across top then pour in flour and mix.

Step 6
Pour into baking dish, bake about 30 minutes.

Step 7
Mix together melted butter, milk, vanilla, brown sugar, coconut, and pecans.

Step 8
When the cake is ready, spread mixture evenly over top.

Step 9
Choose broil regime for the oven and broil the cake until crust is bubbly and coconut is just starting to brown about 1 – 2 minutes.

Step 10
Let cool.
